Collecting Cooking Oils

Much like marinades, spices, sauces, dips, and dressings, cooking oils have their own unique flavor and it can take time to acquire a good collection to have the right oil handy for a specific dish. While oil does not have to be refrigerated, it should be kept closed and tightly lidded; often away from bright light. That is why many oils come in a green or brown colored glass bottle to preserve the flavor for long term use. 

One important tip to remember is that different oils have different smoke points. In other words, some oils give off smoke at higher temperatures and so it is necessary to consider what oil to use for which dish, especially when baking, roasting, broiling, deep frying or sautéing.
